These Stuffed & Dipped Date Delights are the ultimate fusion of sweet, salty, and indulgent. Each bite starts with a soft, chewy Medjool date, naturally caramel-like in flavor, generously stuffed with rich, crunchy peanut butter for a satisfying contrast of textures. As if that weren’t enough, these decadent treats are then dipped in smooth, velvety dark chocolate and finished with a sprinkle of flaky sea salt, enhancing every luscious bite. The result? Ingredients:

  • 8 Medjool dates (pitted) – Will still work with regular dates, but Medjool are bigger
  • ¼ cup natural peanut butter (or almond butter)
  • ½ cup dark chocolate (70% or higher), chopped or in chips
  • 1 tsp coconut oil (optional, for smoother chocolate)
  • Sea salt (for sprinkling)

Instructions:

  1. Prepare the Dates:
    • Slice each date open lengthwise (don’t cut all the way through).
    • Spoon about ½ teaspoon of peanut butter into the center of each date and gently close it.
  2. Melt the Chocolate:
    • In a microwave-safe bowl, melt the dark chocolate and coconut oil in 30-second intervals, stirring between each, until smooth.
    • Alternatively, use a double boiler to melt the chocolate on the stovetop.
  3. Dip the Dates:
    • Using a fork or tongs, dip each stuffed date into the melted chocolate, coating it completely.
    • Let excess chocolate drip off before placing it on a parchment-lined tray.

    • Sprinkle sea salt on top while the chocolate is still wet.
  5. Chill & Set:
