Protein Choc Fudge Bites are rich, chewy snacks crafted with real ingredients like almond flour, nut butter, dates, and a smooth dark chocolate topping. With no refined sugar and a natural protein boost, these bites deliver an indulgent fudge-like texture that satisfies sweet cravings without compromise. They’re perfect as a nourishing afternoon treat, a pre- or post-workout boost, or whenever you need a little chocolate-fueled pick-me-up.

Ingredients

Nougat Layer (Protein & Fiber)

  • 1 cup almond flour (or oat flour for nut-free)
  • ¼ cup vanilla protein powder (optional)
  • 2 tbsp peanut butter or almond butter
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1–2 tbsp milk (to help bind)

Caramel Layer (Naturally Sweet & Gooey)

  • 10 soft Medjool dates, pitted
  • ¼ cup almond butter or tahini
  • 1 tbsp coconut oil
  • ½ tsp sea salt
  • 1–2 tbsp water (if needed for blending)

Chocolate Coating (Rich & Indulgent)

  • 200g dark chocolate (70%+ cacao)
  • 1 tsp coconut oil (for smooth melting)

Instructions

  1. Make the Nougat:
    • Mix almond flour, protein powder, peanut butter, maple syrup, and vanilla.
    • Add a bit of milk if it’s too dry, then press into a lined tray.
    • Freeze for 10 minutes.
  2. Make the Caramel:
    • Blend dates, almond butter, coconut oil, and sea salt until smooth.
    • Spread over the nougat layer and freeze again for 15 minutes.
  3. Add Chocolate Layer:
    • Melt dark chocolate with coconut oil.
    • Spread the chocolate over the caramel layer
    • Refrigerate until firm.
    • Cut into bite size snacks
