Ingredients (makes ~12 cookies):
- 1 cup almond meal
- ½ cup whole oats (or quick oats for finer texture)
- ¼ cup whey or plant-based vanilla protein powder
- ¼ cup chopped almonds (for that extra crunch)
- ¼ cup dark chocolate chips (70% or more for less sugar)
- ¼ cup coconut sugar (or brown sugar)
- ¼ tsp baking soda
- Pinch of salt
- 1 egg (or flax egg)
- 2 tbsp coconut oil (melted)
- 1 tbsp nut butter (almond or peanut)
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 170°C (340°F) and line a tray with baking paper.
- In a large bowl, mix almond meal, oats, protein powder, chopped almonds, baking soda, salt, and coconut sugar.
- In another bowl, whisk together the egg, melted coconut oil, nut butter, and vanilla.
- Combine wet and dry ingredients. Mix until it forms a firm dough.
- Fold in dark chocolate chips.
- Scoop into balls (about 1.5 tbsp each), flatten slightly on tray (they won’t spread much).
- Bake for 12–15 minutes or until golden and firm on the edges.
- Let cool completely to allow them to crisp up.
