These Stuffed & Dipped Date Delights are the ultimate fusion of sweet, salty, and indulgent. Each bite starts with a soft, chewy Medjool date, naturally caramel-like in flavor, generously stuffed with rich, crunchy peanut butter for a satisfying contrast of textures. As if that weren’t enough, these decadent treats are then dipped in smooth, velvety dark chocolate and finished with a sprinkle of flaky sea salt, enhancing every luscious bite. The result? A perfectly balanced, utterly addictive snack that feels like a sinful dessert but is packed with wholesome goodness. Whether you’re craving a mid-day energy boost or a luxurious after-dinner treat, these little bites of heaven deliver pure satisfaction.
Ingredients:
- 8 Medjool dates (pitted) – Will still work with regular dates, but Medjool are bigger
- ¼ cup natural peanut butter (or almond butter)
- ½ cup dark chocolate (70% or higher), chopped or in chips
- 1 tsp coconut oil (optional, for smoother chocolate)
- Sea salt (for sprinkling)
Instructions:
- Prepare the Dates:
- Slice each date open lengthwise (don’t cut all the way through).
- Spoon about ½ teaspoon of peanut butter into the center of each date and gently close it.
- Melt the Chocolate:
- In a microwave-safe bowl, melt the dark chocolate and coconut oil in 30-second intervals, stirring between each, until smooth.
- Alternatively, use a double boiler to melt the chocolate on the stovetop.
- Dip the Dates:
- Using a fork or tongs, dip each stuffed date into the melted chocolate, coating it completely.
- Let excess chocolate drip off before placing it on a parchment-lined tray.
- Add Finishing Touches:
- Sprinkle sea salt on top while the chocolate is still wet.
- Chill & Set:
- Place the tray in the fridge for 15-20 minutes (or freezer for 10 minutes) until the chocolate hardens.
- Enjoy!
- Store in an airtight container in the fridge for up to a week (if they last that long!).
Storage:
Your Stuffed & Dipped Date Delights will last:
- At Room Temperature: 3-4 days (in an airtight container in a cool, dry place).
- In the Fridge: 1-2 weeks (best for keeping the chocolate firm and peanut butter creamy).
- In the Freezer: 2-3 months (store in a freezer-safe container, let them sit for a few minutes before eating).
For the best texture and freshness, storing them in the fridge is ideal. Freezing them turns them into a chewy, ice-cold treat, perfect if you like a firmer bite!
